I hate having to comb through a 20 page online dissertation before finding the recipe though, so here it is!

Ingredients:

3/4 c. fresh lemon juice (about 3 lemons) - though I prefer a bit more to cut through the richness

3/4 stick butter

1-1/4 to 1-1/2 c. heavy cream

2-1/2 c. freshly grated Parmesan (divided)

1 lb dry fettuccini (I only had thin spaghetti on hand, so use what you have!)

1 tsp. each of ground black pepper and salt

1 c. pasta water

Instructions:

Bring a large pot of heavily salted water to a boil over high heat. Cook the pasta to al dente, according to package directions, reserving one cup of pasta water before draining.

While the water is boiling, finely grate the zest of the lemons and set aside.

Quarter one of the lemons, set aside. Juice the other two other two lemons, set juice aside.

Melt the butter in a large nonstick frying pan over medium/med-high heat. Add the quartered lemon pieces, cut-side down, and sear until both cut sides are caramelized, about 2 minutes per side. Remove the lemon pieces from the pan and juice them into the pan when cool enough to handle. Discard the juiced lemon pieces.

Add the cream to the pan and bring to a simmer. Add the salt, pepper, and half of the Parmesan; whisk to combine; and remove the pan from the heat.

Add the pasta, the remaining Parmesan, reserved lemon juice, and about 1/2 c. of the reserved pasta water to the pan of sauce.

Place the pan over low heat and toss until the cheese is melted, adding more pasta water as needed to reach the desired sauce consistency (the sauce does thicken and get absorbed as it sits).

Remove the pan from the heat and toss in the reserved lemon zest. Taste and season with more salt and pepper as needed. If you choose, garnish with fresh parsley or dill, red pepper flakes, or crispy bacon or guanciale!

Buon appetito!

This recipe was adapted from thestayathomechef.com. I made enough modifications that I wanted to share my own recipe. I hope you enjoy these as much as my family does on a cold Sunday winter night as you smell the savory spices and pluck out a guitar chord or two while it stews all day!

Ingredients:

- 4lbs bone-in beef short ribs (boneless if you can’t find)

- kosher flaky salt and fresh cracked pepper

- Canola oil (about 1T)

- 1.5 c beef broth

- 1.5 c dry red wine (I use a decent quality cabernet)

- 8 cloves garlic

- 1 tsp onion powder

- 1/4 c Worcestershire sauce

- 1 sprig fresh Rosemary

- 1 dried bay leaf

- 1 sprig fresh thyme (optional)

Instructions:

Season the short ribs from an arm's height above the plate with a generous amount of kosher flaky salt and pepper to ensure an even spice layer. Heat a large cast iron skillet with a thin layer of canola oil over med-high to high heat. When you see the wisps of smoke above the pan, the oil is hot enough to sear. Sear the short ribs on each of the 4 sides for about 2 minutes per side. Intersperse 4 of the whole garlic cloves in the pan with ribs.

Pour the beef broth, Worcestershire sauce, and onion powder into a slow cooker and stir together. Add the remaining 4 whole garlic cloves. Place the seared short ribs into the liquid in the slow cooker.

Deglaze the still screaming hot skillet with the wine and allow a few minutes to simmer and burn the alcohol. Then pour entire contents of skillet (drippings, wine, and charred garlic) over the meat in the slow cooker.

Place rosemary sprig and bay leaf (and thyme sprig if you have) on top of meat and put the lid on. Cook on low for 7-9 hours, until meat is tender. I usually cook till the 8th hour and if the liquid is boiling too rapidly in the pot, I set to warm for the 9th hour.

You can strain the slow cooker liquid with a fine sieve over sauce pot and simmer with a tablespoon or so of cornstarch (and pad of butter if so inclined) to thicken for gravy.

Serve over a generous pool of creamy mashed potatoes, grits, risotto, or polenta.

I hope you enjoy, and let me know how it turns out!
Ashley Godshalltag:www.ashleygodshall.com,2005:Post/65054132020-12-22T11:05:04-05:002020-12-22T16:55:57-05:002020 Reflections & EP Album Release
Hello Friends, Fans, and Family!

I hope this finds you all safe and well and managing through this very different - and at times difficult - holiday season. 2020 has been a year of struggles, sickness, political unrest, job uncertainty, and isolation. But it has also been a time of great resilience, hope, creativity, love, and personal growths.

As the restaurant and hospitality industries were forced to shut down, live music quickly followed. Ash & Snow had the privilege of continuing to entertain through the spring, summer, and fall seasons outside at some of our favorite beautiful venues with safely distanced outdoor dining capacity. We look forward to playing at all our regular hot spots again in the new year when the weather warms and the vaccine becomes more readily available, and we are all looking forward to the ability to safely gather and freely socialize with our loved ones again!

In the midst of the chaos and cancelled gigs, Ash and Snow took to the studio over the fall recording a few of our favorite cover tunes. It’s been a fun (and safe) experience, and I wanted to share the results of our efforts.

You can preview the tunes on our album site, which will also link to your favorite streaming platforms - including Spotify, Apple Music, iTunes, Amazon Music, Pandora, Deezer, and iHeart Radio. We believe there's a little something for everyone on the album. One of the best ways to support local artists during the pandemic is to "favorite" them and add their music to your playlists on your streaming sites and share with your friends on social media outlets - it's free and easy! The digital album is also available for purchase at ashleygodshall.com/store.

On behalf of myself, Jerry, and John, I wish you a safe and warm holiday season. We'll see you on the other side of this!

I sat down to tea in Wonderland (also known as the whimsically bohemian tea room, Alice's Tea Cup Chapter I) on Monday night with my friend, Sarah Coale. If you have never been to an Alice's Tea Cup, Chapters I or II, then you are missing out on a beautifully eclectic array of teas, delicious scones, and a tasty selection of salads and sandwiches, all set in the charming world of Alice in Wonderland.

Sarah and I were in NYC for a very important charity event: a jewelry sale of her homemade wares to benefit Broadway Barks. Broadway Barks is an organization co-founded by two of our favorite leading ladies, Bernadette Peters and Mary Tyler Moore, which partners with many local shelters to promote the adoption of shelter animals. Every year, Broadway Barks hosts a large pet homing and fundraising event in the Theater District, but this year's event was cancelled due to construction issues at the locale. Out of the kindness of my friend's very generous heart and because of her love of animals and the fabulous Bernadette Peters, Sarah spent hundreds of hours of her own time and her own carefully saved money, making beautiful jewelry to sell for the charity to help make up for the cancelled annual fundraiser.

In addition to the sales from Monday night at Alice's, from now till the end of the week, Sarah will be selling her jewelry online and ALL of the money from the sales will be donated to Broadway Barks. You can view some of Sarah's jewelry or reach out to her to see special pieces at Sarah's Jewels.

Another generous guest at Monday night's tea party charity event was the owner of Alice's Tea Cup herself, Lauren Fox. Lauren donated two of her best tables at Alice's for the jewelry sale. Lauren has acquired many hats from the Mad Hatter: in addition to being an NYC restaurateur, she is also a holistic healer and wears my personal favorite hat as that of a folk singer. With hair like Mary Travers and a voice like Joni Mitchell, Lauren Fox performs concerts throughout NYC.

Lauren's next concert will be a Joni Mitchell tribute on September 13th at New York's famed 54 Below! It turns out Gregory Focker's father-in-law, Jack, was absolutely correct, Puff really was about a boy and his magical dragon! Peter Yarrow wrote the iconic folk song while studying at Cornell. At that time, marijuana was a "West Coast thing" the popularity of which had not yet penetrated the pristine treelines of upstate New York. So there you have it folks, Puff the Magic Dragon is about a loss of boyhood innocence. Thank you, Peter, for your enchanting music and for being so generous of your time and stories!

Chapter 3: Shhh, Don't Tell Mama!

Our lovely evening ended with Sarah having collected enough from her jewelry sale to make a generous donation to Broadway Barks! In celebration, we headed to my favorite New York spot, Don't Tell Mama cabaret and piano bar. I love this fab joint because I always meet interest folks and hear great entertainers! Despite my embarrassment of the clip for forgetting the words to one of my favorite classics, not being dressed to perform, and sitting to sing (much to the chagrin of the pianist), I am ending this post with my less than perfect performance of Summertime that night. I have since enjoyed many of her other recordings, from spirituals to Rachmaninoff.

Many of you have asked me what it was like working with Ms. Battle. Some may be aware of controversy during her career at the Met among those who labeled her difficult to work with. If you are looking for someone to validate or juice up those rumors, I happily cannot.

My firsthand experience working with Ms. Battle, as a member of the Philadelphia Heritage Chorale, in her concert at the Kimmel Center was amazing and rewarding. This woman knows what she wants, has the talent and experience to back up her requests, and expects you to deliver. Though there was an occasional breakdown in communication between what she wanted us to deliver and how we were to get there, I enjoyed every minute of our rehearsals and performance time together.

She was very pleasant, had a good sense of humor, and was generous with her time greeting us after the concert. Beautiful lady with a regal air about her and soooo much talent (and unfortunately extremely camera shy, so no pictures). Watching her perform from 2 feet away, listening to her sing, and getting to see some of her preparation process during the rehearsals has been one of the highlights of my career so far.

Eating at the sports bar on the Base and trying to sing along with familiar American praise and worship tunes being sung in Korean at the Church were our closest traces of home.

One of the most poignant of our day trips was the Demilitarized Zone (DMZ). There, the memorialized tourist site is a cold reality of the still-divided peninsula and a reminder of loss for both Koreans and Americans. Many South Koreans will never find out what happened to their loved ones trapped on the other side of the border. Though the South Korean people remain hopeful their country will one day reunite, landmines still riddle the forests (relics from a war fought more than 60 years in the past) and there are still barbed wire fences and military outposts along the coast near the border due to the constant fear of Northern invasion.

One of my favorite experiences of the trip was the Taekwondo class and demonstration. We strolled, we listened to bands, we ate festival food, we took pictures. It was definitely a lovely summer afternoon outing against the glistening backdrop of the mighty Lehigh and Delaware Rivers. I took this photo of Chris doing his thing (he's really good at it and you can check out some of his noteworthy photography by clicking HERE):

One of the bands particularly on fire at this community event was the James Supra Blues Band. As every Lehigh Valleyian knows, my good friend and colleague, harmonica extraordinaire James Supra, and his band deliver some of the best blues this side of the Mason-Dixon. The new band members stepped up with veteran JSBB drummer Allen Wanamaker and brought some Southern heat to Easton, PA (making us thoroughly grateful for the abundance of hand squeezed lemonade)! Well done Mr. Supra and well done Easton for continuing to bring us events like this one and making Lehigh Valley cities part of Pennsylvania's top 10 most exciting places!
